A tradition from Sorrento

Between the Gulf of Naples, Mount Vesuvius and the Sorrento Peninsula, clay working has been passed down through generations. Forni Aversa combines this craft tradition with the requirements of modern pizza ovens.

Our story

Biscotto di Sorrento · Forni Aversa

Why Biscotto di Sorrento? Material and characteristics

The difference starts with the clay: Biscotto di Sorrento is a porous baking surface handcrafted on the Sorrento Peninsula. It replaces the existing stone in a compatible pizza oven or is custom cut to size. The product is a pizza stone; the oven is not included.

Clay from the Sorrento area

The special clay mixture contains natural mineral components, including volcanic silica and pumice. The material is shaped and fired; warm terracotta colours and an open-pore surface define its appearance.

Porosity and moisture

The porous structure can absorb moisture from the dough. It is a key feature of Biscotto and contributes to the baking properties of the surface. The stone should be dry before use and must not be soaked.

Gentle heat transfer

Biscotto transfers heat relatively gently to the pizza base. At high temperatures this helps bake the base without darkening it too quickly. Oven, top heat, temperature, dough and baking time remain decisive.

For Neapolitan pizza

Biscotto is particularly suited to high-temperature pizza ovens. An airy crust and a well-baked base depend on the interaction of stone, oven and dough. Follow the product instructions and your oven manufacturer’s guidance.

Handcrafting and baking side

Every stone is unique. Colour, pores, edges and thickness can vary slightly. Bake on the smoother upper side; the underside may be rougher or slightly uneven. Small natural irregularities are typical of handcrafted production.

Dimensions, thickness and care

Shape, supporting area and thickness must suit the oven. Allow room for installation and thermal expansion without obstructing components or airflow. Heat gradually, avoid sudden temperature changes and clean dry after cooling.

Frequently asked questions

What is a Biscotto di Sorrento?

A porous, handcrafted baking surface made from Italian clay for pizza ovens, particularly suited to Neapolitan pizza at high temperatures.

Does the Biscotto need seasoning?

Oil seasoning is not required. Install the stone dry and heat it gradually on first use. Follow the instructions supplied with the stone.

Why does pizza darken less quickly on Biscotto?

The porous structure promotes gentler heat transfer than many denser baking surfaces. Temperature, baking time and dough also affect the result.

How do you clean a Biscotto?

Let it cool completely, brush it dry or gently scrape off residue. Do not soak it or use cleaning products.

What temperatures can a Biscotto withstand?

It is designed for the high temperatures of pizza ovens. Follow the instructions for your stone and oven, heat gradually and avoid sudden temperature changes.

Are small differences in size normal?

Yes. Handcrafting can cause slight variations in size, colour, pores and edges. Choose the correct model and leave room for thermal expansion.

Can I order a custom-cut Biscotto?

Yes. Rectangular, square and round stones, corners, cut-outs and special contours can be checked and cut using measurements or a clearly dimensioned drawing. Options and conditions are on the product page.

Can a large stone consist of several pieces?

For very large custom formats, a surface made from several matching cut pieces may be useful or necessary. This makes transport and installation easier. The arrangement is checked against the specifications of the particular order.

Biscotto and firebrick compared

Biscotto is a porous clay baking surface with gentle heat transfer. Traditional firebrick is usually denser, and its thermal properties vary by composition. Your oven, desired baking temperature and dough determine the right choice. Compare the instructions for the specific stone.
